The Partners Behind The Name
Forte Hospitality Group in Chicago is a neighborhood-focused restaurant company led by partners Kosti Demos, John Lawson, and Chef Saul Ramos. They are known for operating Lincoln Park spots Sapori Trattoria and Butcher & the Bear, and recently opened Ithaki Estiatorio in Greektown.
Kosti Demos

Kosti’s roots in hospitality run deep. After getting his start in his family’s restaurant at just 13, he later went on to help oversee Costa’s in Greektown alongside his uncle — a beloved landmark of elevated Greek cuisine and a pillar of the community.
Now, Kosti returns to Greektown with Ithaki Estiatorio — his most personal project to date. With a vision to help revitalize the neighborhood and celebrate the spirit of Hellenic hospitality, Ithaki will offer a refined yet welcoming experience inspired by the timeless beauty of the Aegean.

John Lawson

With more than 25 years of experience in construction and design, John has built everything from neighborhood restaurants to homes across Chicago. His expertise brings both vision and craftsmanship to every project he touches.
Now, as Partner at Ithaki Estiatorio, John is helping shape more than just walls and spaces. He is crafting an environment where the timeless spirit of Greek hospitality can shine — warm, welcoming, and refined.
Soon, the doors will open on a space designed to bring the Greek community back to Greektown and to invite all guests to gather, connect, and celebrate.
Saul Ramos

From bussing tables at 13 to leading kitchens across Chicago and Miami, Saul has spent his career crafting elevated dining experiences rooted in passion and creativity.
Now, as Chef Partner at Ithaki Estiatorio, Saul brings his expertise and vision to the heart of Greektown. Inspired by the flavors and traditions of the Aegean, he is creating a menu that honors Greek heritage while celebrating the beauty of seasonal ingredients and modern techniques.
